Taco Lasagna is a delicious fusion of classic taco flavors layered between soft tortillas and topped with melted cheddar cheese. This easy-to-make dish combines seasoned ground beef, zesty tomatoes, and creamy nacho cheese soup, making it a perfect meal for family gatherings or weeknight dinners.   • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 1 can RoTel diced tomatoes with chiles, drained
  • 1 cup grated cheddar cheese
  • 12 8-inch soft tortillas
  • ¼ cup water
  • ¼ cup sour cream
  • 1 can Nacho Cheese Soup
  • Guacamole, cilantro, and extra sour cream for topping as desired

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 baking dish with non-stick spray.
  2. In a large skillet over medium heat, cook the ground beef, crumbling it as it cooks. Once browned, drain any excess grease.
  3. Add the taco seasoning and water to the skillet with the beef. Stir and cook for an additional 2 minutes.
  4. In a medium mixing bowl, combine the drained RoTel tomatoes, nacho cheese soup, and sour cream. Stir in the seasoned beef mixture until well combined.
  5. Place 3 tortillas at the bottom of the prepared baking dish. Spread 1/3 of the meat mixture over the tortillas. Repeat the layers, finishing with a layer of tortillas on top.
  6. Sprinkle the grated cheddar cheese evenly over the top layer of tortillas.
  7. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
  8. Garnish with chopped cilantro, guacamole, and extra sour cream if desired. Serve hot and enjoy!
