  • 1 can (15 oz) corn, drained
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 cup chopped green onions
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Sour cream for serving
  • Salsa for serving

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the taco seasoning and follow the package instructions for seasoning the beef. Stir in the diced tomatoes with green chilies, black beans, and corn.
  2. In a large crockpot, spread half of the tater tots in an even layer at the bottom. Pour the beef mixture over the tater tots. Sprinkle 1 cup of shredded cheddar cheese over the beef mixture. Top with the remaining tater tots.
  3. Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours until the tater tots are crispy and the casserole is heated through.
  4. About 30 minutes before serving, sprinkle the remaining 1 cup of shredded cheddar cheese over the tater tots. Cover and cook until the cheese is melted.
  5. Garnish with chopped green onions. Serve with sour cream and salsa on the side.
