  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 red bell pepper, chopped
  • 2 large eggs, beaten
  • 1 green bell pepper, chopped
  • 1/4 cup ketchup
  • 2 tablespoons soy sauce
  • 1 cup pineapple chunks
  • 1/2 cup rice vinegar
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. Season the chicken pieces with salt and pepper. Coat the chicken in cornstarch, then dip into the beaten eggs.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped red and green bell peppers. Cook for 3-4 minutes until slightly softened.
  4. Add the pineapple chunks to the skillet and cook for an additional 2 minutes.
  5. In a small bowl, mix together the brown sugar, rice vinegar, ketchup, and soy sauce.
  6. Pour the sauce mixture into the skillet with the bell peppers and pineapple. Bring to a simmer.
  7. Add the cooked chicken back to the skillet and stir to coat with the sauce.
  8. Add the cornstarch mixture to the skillet and stir until the sauce thickens, about 1-2 minutes.
  9. Serve the Sweet and Sour Chicken over cooked rice.
