  • 4 medium eggplants
  • 1 large onion, finely chopped
  • 1 lb ground beef or lamb
  • 1 teaspoon ground paprika
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup tomato sauce
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch thick shell. Chop the scooped-out eggplant flesh and set aside. Brush the eggplant shells with olive oil, place them on a baking sheet, and bake for about 20 minutes or until slightly tender.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and garlic, and sauté until softened and fragrant. Add the ground beef or lamb and cook until browned. Stir in the chopped eggplant flesh, diced tomatoes, and tomato sauce. Season with cumin, paprika, salt, and pepper. Cook for about 10-15 minutes until the mixture is well combined and the flavors meld together.
  3. Remove the eggplant shells from the oven and fill them with the meat mixture. Top with shredded mozzarella and grated Parmesan cheese.
  4. Return the stuffed eggplants to the oven and bake for another 15-20 minutes, until the cheese is melted and bubbly.
  5. Garnish with freshly chopped parsley before serving.
