Fresh strawberries
1/4 cup sugar
1 cup glutinous rice flour
Cornstarch or potato starch for dusting
3/4 cup water
Optional: red food coloring for pink mochi
Instructions
Wash and dry the strawberries, then remove the stems. Cut them into halves or quarters, depending on their size.
In a microwave-safe bowl, mix the glutinous rice flour, sugar, and water until smooth. If you want pink mochi, add a few drops of red food coloring.
Microwave the mixture on high for 1-2 minutes until it becomes thick and sticky. Stir well.
Allow the mochi mixture to cool slightly until it's safe to handle.
Dust a clean surface with cornstarch or potato starch to prevent sticking.
Take a small amount of the mochi mixture and flatten it into a disc shape. Place a piece of strawberry in the center, then wrap the mochi around it, pinching to seal.
Repeat the process until all the mochi and strawberries are used.
Dust the finished strawberry mochi with more cornstarch or potato starch to prevent sticking.
