This Stir-Fried Chicken Noodles recipe features tender strips of chicken marinated in a flavorful blend of soy sauce, vinegar, and honey, stir-fried with vibrant vegetables and tossed with noodles. It’s a quick and satisfying dish that combines protein, vegetables, and carbohydrates for a balanced meal.

  • 250g boneless chicken, cut into thin 2-inch strips
  • 150g noodles
  • 1/2 tsp salt
  • 1/2 tsp powdered white pepper
  • 1 tsp soy sauce
  • 1 tsp vinegar
  • 1 tsp honey
  • 23 cloves garlic, grated
  • 1.5 cups broccoli florets (about 100g)
  • 1.5 cups julienned carrots (about 75g)
  • 1.5 cups julienned red bell pepper (about 75g)
  • 2 tbsp chopped white part of spring onions (about 3 spring onions)
  • 3 green parts of spring onions, roughly chopped (for garnish)
  • 2 tsp minced garlic
  • 1 tsp minced ginger
  • 2 tbsp refined oil
  • 1/4 tsp salt for seasoning (or to taste)
  • 1/4 tsp powdered white pepper for seasoning (or to taste)
  • 2 tsp dark soy sauce
  • 2 tsp oyster sauce
  • 3 tsp red chili sauce

Instructions

  1. Cut the boneless chicken into thin 2-inch strips.
  2. Marinate the chicken strips with salt, powdered white pepper, soy sauce, vinegar, honey, and grated garlic. Mix well and let it rest for about 20-30 minutes.
  3. Boil the noodles according to package instructions or in boiling water for 2-3 minutes until al dente. Drain and rinse with cold water, then mix with 1 tsp of oil.
  4. Heat 1.5 tbsp of oil in a wok and stir-fry the marinated chicken over high heat for about 4 minutes until golden brown. Remove and set aside.
  5. Add 1/2 tbsp of oil to the wok, then add minced garlic and ginger. Stir-fry for 15 seconds.
  6. Add the chopped white part of spring onions and stir-fry for another 15 seconds.
  7. Add julienned carrots and broccoli, season with salt and powdered white pepper, and stir-fry for 1 minute.
  8. Add julienned red bell pepper and continue stir-frying for another minute.
  9. Return the cooked chicken to the wok and mix with the vegetables.
  10. Combine dark soy sauce, oyster sauce, and red chili sauce in a small bowl, then pour over the chicken and vegetables. Stir-fry for another minute.
  11. Add the boiled noodles and toss everything together until heated through.
  12. Garnish with chopped green parts of spring onions and serve hot.
