Ingredients

Scale
  • 2 pounds sirloin steak, sliced into thin strips
  • 1 large yellow onion, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • 1 teaspoon ground cumin
  • ⅛ teaspoon cayenne pepper
  • 2 garlic cloves, minced
  • 2 cups Mexican blend cheese, shredded
  • 6 to 8 tortillas

Instructions

  1. In a zip lock bag, combine the sliced steak, olive oil, lime juice, chili powder, ground cumin, cayenne pepper, and minced garlic. Seal the bag and shake well to coat the steak evenly.
  2. Add the sliced red, yellow, and green bell peppers, along with the sliced onion to the same bag. Reseal the bag and shake again to coat the vegetables thoroughly.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Pour in the contents of the bag and cook, stirring occasionally, until the steak is cooked through and the vegetables are tender.
  4. Warm the tortillas. Serve the steak and vegetable mixture with the tortillas. Sprinkle with shredded Mexican blend cheese and add your choice of optional toppings.
