4 boneless, skinless chicken breasts
1 cup ricotta cheese
1 cup fresh spinach, chopped
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning

1/2 cup chicken broth
Instructions
Preheat your oven to 375°F (190°C). Cut a pocket into the side of each chicken breast. Season with salt and pepper.
In a bowl, combine ricotta cheese, chopped spinach, grated Parmesan cheese, garlic powder, and Italian seasoning.
Stuff each chicken breast pocket evenly with the ricotta mixture. Secure with toothpicks if needed.
Heat olive oil in a large oven-proof skillet over medium-high heat. Sear stuffed chicken breasts until golden brown on each side, about 3-4 minutes per side. Pour chicken broth into the skillet around the chicken breasts. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through.
