8 ounces mushrooms, sliced
1 tablespoon olive oil
4 cups fresh spinach
1/4 cup diced onion
8 large eggs
1 cup milk
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme

1/4 teaspoon black pepper

Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish with cooking spray.
Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and diced onion. Cook until mushrooms are golden brown and onions are translucent, about 5-7 minutes. Add fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
