8 ounces fresh baby spinach
1–2 tablespoons olive oil
3 cloves garlic, finely chopped
1 pound ground pork
1 pound ground beef
3–4 eggs
2 ¼ cups bread crumbs
½ cup Parmesan cheese
4 cloves garlic, finely chopped
Salt and pepper to taste
Splash of milk
2 tablespoons olive oil
Mozzarella cheese, cut into small cubes
1 jar Rao’s marinara sauce
Instructions
Heat olive oil in a skillet over medium heat. Add the baby spinach and toss until coated. Let it wilt for a few minutes. Add the finely chopped garlic and sauté for another minute or two until fragrant. Remove spinach from the skillet, chop it into small pieces, and set aside to cool.
Preheat your oven to 350°F (175°C). In a large bowl, combine the ground beef, ground pork, bread crumbs, eggs, milk, chopped garlic, Parmesan cheese, salt, pepper, and the cooled spinach mixture. Mix well.
Take a small amount of the meat mixture and flatten it in your hand. Place a cube of mozzarella in the center, then fold the meat around it, rolling it into a ball. Repeat with the remaining meat mixture and mozzarella cubes.
Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides until they are well-seared.
Transfer the browned meatballs to a baking dish and cover with Rao’s marinara sauce. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and the cheese is melted.
