1 cup all-purpose flour
1/2 cup milk
1 egg
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups fresh spinach, chopped
1 cup grated cheese (cheddar, mozzarella, or a mix)
1/4 teaspoon garlic powder (optional)
Vegetable oil for frying
Instructions
In a large bowl, combine flour, baking powder, salt, black pepper, and garlic powder (if using).
In another bowl, whisk together milk and egg until well blended.
Stir the wet ingredients into the dry mixture until just combined.
Gently fold in chopped spinach and grated cheese until evenly distributed.
Pour about 1 inch of vegetable oil into a large skillet. Heat over medium-high until shimmering.
Drop spoonfuls of batter into the hot oil, pressing them slightly with the back of the spoon to flatten. Fry for 2-3 minutes per side or until golden brown.
Remove fritters from oil and drain on paper towels. Serve warm with your favorite dipping sauce.
