  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 cup short-grain rice
  • 1 tablespoon sriracha sauce
  • 3 tablespoons mayonnaise
  • 1/2 pound cooked shrimp, peeled and deveined
  • 1 tablespoon lime juice
  • 1 cup diced cucumber
  • 1 cup diced avocado
  • 4 teaspoons furikake

Instructions

  1. Rinse short-grain rice under cold water until clear. In a rice cooker or pot, combine rice and water. Cook until water is absorbed and rice is tender.
  2. Mix rice vinegar, sugar, and salt until dissolved. Drizzle over cooked rice and gently fold to combine. Allow rice to cool.
  3. Combine cooked shrimp, mayonnaise, and sriracha sauce in a bowl. Ensure shrimp is evenly coated with the spicy mayo.
  4. Layer ingredients in small molds or bowls. Begin with seasoned rice, followed by diced avocado, diced cucumber, and spicy shrimp mixture.
  5. Gently press down to compact the stacks. Remove molds to reveal the sushi stacks.
  6. Sprinkle furikake over each stack and drizzle with lime juice.
