  • 5 chicken breasts
  • Brioche buns
  • Vegetable oil (enough for deep frying)
  • 1 dash salt
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon white pepper
  • 1 tablespoon hot Hungarian paprika
  • 1 tablespoon Slap Yo Mama seasoning
  • 1 ½ cups buttermilk
  • 2 cups flour
  • 4 tablespoons cornstarch
  • 1 ½ tablespoons Slap Yo Mama seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 2 eggs
  • 1 tablespoon Frank's Red Hot sauce
  • 1 cup buttermilk
  • ¼ cup mayo
  • ¼ teaspoon cayenne pepper

Instructions

  1. In a large bowl, combine chicken breasts with salt, onion powder, garlic powder, paprika, Slap Yo Mama seasoning, white pepper, and buttermilk. Marinate for 30 minutes to 2 hours.
  2. In a large deep pot, heat vegetable oil to 350°F (175°C).
  3. In a wide bowl, mix flour, cornstarch, onion powder, garlic powder, paprika, and Slap Yo Mama seasoning.
  4. In another bowl, whisk together eggs, Frank's Red Hot sauce, and buttermilk.
  5. Remove marinated chicken from buttermilk, dip each piece in the flour mixture, then in the egg mixture, and again in the flour mixture until well coated.
  6. Fry two pieces of chicken at a time until golden brown and cooked through, about 7 minutes per side. Set cooked chicken on a rack to cool.
  7. In a small bowl, whisk together mayo and cayenne pepper to make the spicy mayo.
  8. Spread spicy mayo on the inside of toasted buns, add fried chicken, pickles, lettuce, and the top bun. Serve immediately.
