This Southern Squash Casserole is a comforting dish that combines tender yellow squash with creamy ingredients and a crunchy Ritz cracker topping. Perfect for family gatherings and potlucks, it offers a delightful blend of flavors and textures that will please everyone at the table.

  • 1 cup mayonnaise
  • 8 oz shredded cheddar cheese
  • ½ tsp fresh ground black pepper
  • 3 lb yellow squash, sliced
  • ½ cup diced Vidalia onion, optional
  • 10.5 oz can cream of chicken soup
  • 1 tsp salt
  • 1 egg
  • 2 sleeves of Ritz crackers, crushed
  • 1 stick melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and slice 3 lb of yellow squash into small medallions or dice into smaller pieces if the squash is large. Place the squash in a large mixing bowl.
  3. In a separate bowl, combine 10.5 oz cream of chicken soup, 1 cup mayonnaise, 1 egg, 8 oz shredded cheddar cheese, ½ cup diced Vidalia onion (optional), 1 tsp salt, and ½ tsp fresh ground black pepper. Mix well.
  4. Pour the soup mixture over the sliced squash and stir until everything is well mixed. Transfer the mixture to a casserole dish.
  5. Crush 2 sleeves of Ritz crackers while they are still in their packaging. You can place them in a dish towel and use a rolling pin or meat tenderizer to crush them, or put them in a resealable plastic bag and crush them.
  6. Pour the crushed crackers into a bowl. Melt 1 stick of butter in the microwave and stir it into the crushed crackers until the mixture is moist.
  7. Drizzle the buttered cracker mixture evenly over the top of the casserole.
  8. Bake in the preheated oven for 30 minutes covered with foil to prevent the crackers from burning. Then, uncover and bake for an additional 20 minutes until the casserole is bubbly and the top is golden brown.
