4 sheets nori seaweed
250g sushi rice
150g smoked salmon, thinly sliced
1 avocado, thinly sliced
3 tbsp rice vinegar
1 tbsp sugar
1/2 tsp salt
Soy sauce, pickled ginger, and wasabi, for serving
Instructions
Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions. In a small bowl, combine rice vinegar, sugar, and salt. Stir until dissolved and fold into the cooked rice. Let cool to room temperature.
Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top edge. Arrange slices of smoked salmon and avocado in a line across the center of the rice.
Using the bamboo mat, roll the sushi tightly from the bottom edge, applying gentle pressure to shape the roll. Seal the edge with a little water if needed.
With a sharp knife, slice each roll into bite-sized pieces, cleaning the knife between cuts for neat slices. Serve with soy sauce, pickled ginger, and wasabi on the side.
