  • 1 lb chicken thighs, boneless and skinless
  • 1 can coconut milk (14 oz)
  • 4 cups chicken broth
  • 1 cup cherry tomatoes
  • 1 cup shiitake mushrooms, sliced
  • 2 tbsp fish sauce
  • 1 inch galangal, thinly sliced
  • 2 stalks lemongrass, cut into 2-inch pieces
  • 3 kaffir lime leaves
  • 1 tbsp lime juice
  • 1 tsp sugar
  • Fresh cilantro and sliced red chilies, for garnish

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker and pour in the chicken broth and coconut milk.
  2. Add the sliced shiitake mushrooms, cherry tomatoes, lemongrass pieces, galangal slices, and kaffir lime leaves.
  3. Cover and cook on low for 6 hours.
  4. Remove the chicken from the slow cooker, shred it with two forks, and return it to the pot.
  5. Stir in the fish sauce, lime juice, and sugar. Adjust seasoning if needed.
  6. Ladle the soup into bowls and garnish with fresh cilantro and sliced red chilies.
