1 pound linguine or spaghetti
1 1/2 pounds large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
Juice of 1 lemon
Salt to taste
Black pepper to taste
1/4 cup fresh parsley, chopped
Grated Parmesan cheese for serving
Instructions
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining. Set aside.
In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook until pink and opaque (about 2-3 minutes per side). Remove shrimp from the skillet and set aside.
In the same skillet, add the remaining butter and olive oil. Sauté minced garlic and red pepper flakes until fragrant. Pour in the lemon juice, scraping up any browned bits from the bottom. Allow the sauce to simmer and reduce by half.
Add the cooked shrimp back to the skillet. Toss in the cooked pasta, coating it with the scampi sauce. Season with additional salt and pepper if necessary.
