  • 1 pint cherry tomatoes, halved
  • Fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 lb mixed seafood (shrimp, mussels, clams)
  • 1/2 cup chicken or vegetable broth
  • 1 tsp red pepper flakes
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 12 oz spaghetti

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the halved cherry tomatoes to the pan and cook until softened, about 3-4 minutes.
  3. Pour in the chicken or vegetable broth and bring to a simmer.
  4. Add the mixed seafood to the pan and cook until the seafood is fully cooked and the mussels and clams have opened, about 5-7 minutes.
  5. Toss the cooked spaghetti into the pan with the seafood and sauce. Mix well to coat the pasta evenly. Season with salt, pepper, and red pepper flakes to taste.
  6. Garnish the seafood spaghetti with freshly chopped parsley before serving.
