Ingredients
Scale
8 slices of white bread, crusts removed
2 tablespoons unsalted butter
3 large eggs
8 breakfast sausage links
¼ cup milk
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 teaspoons vanilla extract
Maple syrup for serving
Powdered sugar for dusting (optional)
Instructions
Cook the sausage links in a non-stick skillet over medium heat until browned and cooked through, about 6-8 minutes. Remove from the skillet and let cool slightly.
Using a rolling pin, flatten each slice of bread to about ¼ inch thickness.
Place a sausage link at the edge of each bread slice. Roll up tightly, pinching the edges to seal. Set aside.
In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg until well blended.
Dip each roll-up in the egg mixture, ensuring all sides are coated. Melt butter in the same skillet over medium heat. Cook the roll-ups, turning occasionally, until golden brown on all sides, about 5-7 minutes.
Serve warm with a drizzle of maple syrup and a dusting of powdered sugar, if desired.
