Savory Reuben Egg Rolls are a delicious twist on the classic Reuben sandwich, featuring a crispy exterior filled with corned beef, Swiss cheese, and sauerkraut, all enhanced by Thousand Island dressing. Perfect for parties or as a tasty snack, these egg rolls are sure to impress.

  • 12 egg roll wrappers
  • 1 cup Swiss cheese, shredded
  • 1 lb corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 1/4 cup Thousand Island dressing
  • 1 egg, beaten (for sealing)
  • Vegetable oil (for frying)
  • Extra Thousand Island dressing (for dipping)

Instructions

  1. Lay an egg roll wrapper on a clean surface with one corner facing you.
  2. In the center of each wrapper, place a slice of corned beef. Add a spoonful of sauerkraut and a sprinkle of shredded Swiss cheese.
  3. Drizzle a small amount of Thousand Island dressing over the fillings.
  4. Fold the bottom corner of the wrapper over the filling. Fold in the sides and roll tightly to seal. Brush the top corner with beaten egg to secure.
  5. Continue with the remaining wrappers and filling.
  6. In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).
  7. Fry the egg rolls in batches for about 3-4 minutes per batch, or until golden brown and crispy. Remove from oil and drain on paper towels.
  8. Enjoy hot with extra Thousand Island dressing for dipping.
