4 large eggs
1 cup milk
1/2 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried parsley
8 slices of thick-cut bread
2 tablespoons butter
3 large egg yolks
1 tablespoon lemon juice
1/2 cup unsalted butter, melted and warm
Pinch of cayenne pepper
Salt to taste
Fresh parsley, chopped
Extra grated Parmesan cheese
Instructions
In a large bowl, whisk together eggs, milk, grated Parmesan, salt, pepper, garlic powder, and dried parsley until well combined. Heat butter in a large skillet or griddle over medium heat. Dip each slice of bread into the egg mixture, coating both sides thoroughly. Cook bread slices in the skillet until golden brown and crispy on both sides, about 3-4 minutes per side. Keep warm.
In a heatproof bowl, whisk egg yolks and lemon juice until light and frothy. Place bowl over a pot of simmering water (double boiler method), ensuring the water doesn’t touch the bowl. Gradually whisk in melted butter until sauce thickens and becomes smooth. Remove from heat and season with cayenne pepper and salt.
Arrange Parmesan French toast slices on a serving plate. Drizzle generously with prepared Hollandaise sauce. Garnish with chopped parsley and extra grated Parmesan cheese. Serve immediately.
