1 tablespoon butter
1 cup chicken broth
1 large onion, finely chopped
4 boneless chicken breasts
1/2 cup dry white wine (optional)
1 teaspoon dried thyme
2 tablespoons honey
8 oz mushrooms, sliced
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon Worcestershire sauce
Fresh parsley, chopped (for garnish)
3 garlic cloves, minced
1 lb baby potatoes, halved
1/4 cup soy sauce
Instructions
Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
In the same skillet, add the butter. Once melted, add the chopped onion and garlic. Sauté for about 2 minutes until fragrant.
Add the sliced mushrooms and halved potatoes to the skillet. Cook for another 5 minutes, stirring occasionally.
Pour in the chicken broth and white wine (if using). Add the soy sauce, Worcestershire sauce, honey, and dried thyme. Stir to combine.
Return the chicken breasts to the skillet, nestling them among the vegetables. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
Taste and adjust the seasoning with additional salt and pepper if needed.
Transfer the chicken, mushrooms, and potatoes to serving plates. Spoon the sauce over the top and garnish with chopped fresh parsley.
