3 garlic cloves, finely chopped
300g sausages, skins removed
2 tbsp olive oil
40g Grana Padano, grated
1 onion, finely chopped
3 tbsp tomato purée
250g pasta (penne or spaghetti)
200g mushrooms, sliced
Instructions
Remove the skins from the sausages and cut each into 4 pieces. Roll each piece into small meatballs with your hands.
Heat olive oil in a large frying pan over medium heat. Add the meatballs and cook for 8-10 minutes, until browned on all sides and cooked through. Remove from the pan and set aside.
In the same pan, add the finely chopped onion and cook for 5 minutes until softened.
Add the garlic and mushrooms, frying until the mushrooms are lightly golden, around 3-4 minutes.
Stir in the tomato purée and add 50ml of water. Return the meatballs to the pan, stirring to combine. Season to taste. If the sauce is too thick, add a little more water.
Meanwhile, cook the pasta according to the package instructions until al dente. Drain the pasta, reserving a little of the pasta cooking water.
Toss the cooked pasta into the pan with the meatballs and mushrooms, adding a little reserved pasta water to help coat the pasta evenly.
Divide the pasta among plates and sprinkle with grated Grana Padano.
