Indulge in the flavorful crunch of a Salt Beef Club paired with zesty Cajun Fries. This sandwich combines layers of savory salt beef with fresh veggies and a tangy sauce, perfect for a satisfying meal any time of day.

Ingredients

  • 1 big potato, cut into thin chips
  • 2 tsp olive oil
  • 1/2 tsp Cajun seasoning
  • 1 heaped tbsp mayonnaise
  • 1 tsp chopped chive
  • 1 tsp Dijon mustard
  • 3 slices white or brown bread, lightly toasted
  • 2 radishes, thinly sliced
  • 1 baby gem lettuce or 1/2 avocado, sliced
  • 2 slices salt beef

Instructions

  1. Preheat the oven to 200°C (180°C fan, gas mark 6). Toss thin potato chips with olive oil and Cajun seasoning until evenly coated. Spread chips on a baking tray lined with parchment paper in a single layer. Bake for 20-25 minutes, turning halfway through, until fries are crispy and golden brown.
  2. In a small bowl, mix mayonnaise, chopped chive, and Dijon mustard. Set aside.
  3. Toast slices of bread until lightly golden. Spread prepared sauce evenly over one side of each slice of bread. Layer thinly sliced radishes and avocado or baby gem lettuce on the first slice of bread. Place the second slice of toast on top, sauce side down. Add slices of salt beef on top of the second slice of toast. Place the final slice of toast, sauce side down, on top of the salt beef.
  4. Cut the sandwich diagonally into halves or quarters. Serve the Salt Beef Club Sandwich with Cajun Fries on the side.
