4 (6-oz.) salmon fillets
1/2 cup shredded mozzarella
1/2 (8-oz.) block cream cheese, softened
1/2 cup frozen spinach, defrosted
2 tbsp extra-virgin olive oil
2 tbsp butter
Juice of 1/2 lemon
1/4 tsp garlic powder
Pinch of red pepper flakes
Salt and black pepper to taste
Instructions
Season salmon fillets generously with salt and black pepper. In a mixing bowl, combine softened cream cheese, shredded mozzarella, defrosted spinach, garlic powder, and red pepper flakes. Mix until well blended.
Using a paring knife, carefully slice a pocket into each salmon fillet. Stuff each pocket with the cream cheese mixture, ensuring an even distribution.
Heat olive oil in a large skillet over medium heat. Place the salmon fillets skin-side down in the skillet. Cook for about 6 minutes until the skin is nicely seared.
Flip the salmon fillets and add butter to the skillet. Squeeze lemon juice over the fillets. Continue cooking for another 6 minutes, or until the skin is crispy and the salmon is cooked through.
Remove the salmon from the skillet and serve warm.
