This delicious salmon dish features fillets stuffed with a creamy mixture of spinach, mozzarella, and cream cheese, seared to perfection. Served alongside a rich shrimp Alfredo, it’s a delightful meal that balances flavors and textures.

  • 4 (6-oz.) salmon fillets
  • 1/2 cup shredded mozzarella
  • 1/2 (8-oz.) block cream cheese, softened
  • 1/2 cup frozen spinach, defrosted
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp butter
  • Juice of 1/2 lemon
  • 1/4 tsp garlic powder
  • Pinch of red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Season salmon fillets generously with salt and black pepper. In a mixing bowl, combine softened cream cheese, shredded mozzarella, defrosted spinach, garlic powder, and red pepper flakes. Mix until well blended.
  2. Using a paring knife, carefully slice a pocket into each salmon fillet. Stuff each pocket with the cream cheese mixture, ensuring an even distribution.
  3. Heat olive oil in a large skillet over medium heat. Place the salmon fillets skin-side down in the skillet. Cook for about 6 minutes until the skin is nicely seared.
  4. Flip the salmon fillets and add butter to the skillet. Squeeze lemon juice over the fillets. Continue cooking for another 6 minutes, or until the skin is crispy and the salmon is cooked through.
  5. Remove the salmon from the skillet and serve warm.
