1/2 pound raw shrimp, peeled and deveined
2 salmon fillets (4–6 ounces each), chopped into bite-sized pieces
8 oz fettuccine pasta
6–8 oz grated Parmesan cheese
2 tablespoons olive oil
1 cup heavy cream
2 cloves garlic, minced
Salt and pepper to taste
1/4 cup chopped fresh parsley
1 tablespoon lemon juice
Instructions
Prepare fettuccine according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add shrimp and salmon to the skillet, season with salt and pepper. Cook until shrimp are pink and salmon is flaky, about 3-4 minutes per side. Remove from skillet and set aside.
In the same skillet, pour in heavy cream and bring to a simmer over low heat. Stir in grated Parmesan cheese until melted and the sauce is smooth.
Chop the cooked salmon into bite-sized pieces. Return salmon and shrimp to the skillet with Alfredo sauce. Gently toss to combine. Add cooked fettuccine to the skillet, tossing to coat in the creamy sauce. Stir in lemon juice and chopped parsley.
Garnish with additional parsley and grated Parmesan cheese if desired. Serve immediately and enjoy!
