1 tablespoon butter
1 pound pizza dough
¼ cup half and half
8 cloves roasted garlic, minced
½ cup skim milk
½ teaspoon black pepper
2 tablespoons all-purpose flour
¼ cup Parmesan cheese
1 ½ cups boneless skinless chicken breast, cooked and shredded
¾ cup mozzarella cheese
¼ cup red onion, diced
1 teaspoon fresh thyme, chopped
½ teaspoon dried oregano
1 tablespoon fresh parsley, chopped
Instructions
Preheat the oven to 450°F (230°C). Prepare a baking sheet with a silicone baking mat or grease it and sprinkle with cornmeal.
In a small saucepan over medium heat, melt the butter. Add the minced roasted garlic and sauté for 1 minute. Stir in the flour and cook for an additional minute until well blended. Slowly whisk in the skim milk and half and half. Add the black pepper. Cook the sauce for about 3 minutes, stirring continuously until it starts to thicken. Remove from heat and stir in the Parmesan cheese until smooth.
Roll out the pizza dough into a roughly 12-inch circle on the prepared baking sheet.
Spread the white sauce evenly over the dough. Top with the cooked and shredded chicken, diced red onion, and mozzarella cheese.
Bake in the preheated oven for 17 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven and sprinkle with chopped fresh thyme, dried oregano, and fresh parsley. Cut into slices and serve immediately.
