2 medium yellow squash, sliced into 1/2-inch rounds
4 cloves garlic, minced
1 cup cherry tomatoes, halved
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
2 medium zucchini, sliced into 1/2-inch rounds
Salt and pepper, to taste
Instructions
Preheat the oven to 400°F (200°C).
Slice the zucchini and yellow squash into rounds and halve the cherry tomatoes.
In a large bowl, combine the zucchini, squash, tomatoes, and garlic. Drizzle with olive oil and toss to coat evenly. Season with salt and pepper.
Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
Place the sheet in the oven and roast for 20-25 minutes, stirring halfway through.
Remove from the oven, sprinkle with Parmesan cheese, and return to the oven for an additional 5 minutes until the cheese is melted.
