1 ¼ cups all-purpose flour
1 cup oatmeal
1 teaspoon ground cinnamon
1 ¼ cups light brown sugar, packed
½ cup melted butter
4 cups rhubarb, chopped
1 cup granulated sugar
2 tablespoons cornstarch
1 cup cold water
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 7×11-inch or 8.5×11-inch baking dish.
In a large bowl, combine the flour, oats, cinnamon, brown sugar, and melted butter.
Press half of this crumb mixture into the bottom of the prepared baking dish.
Spread the chopped rhubarb evenly over the pressed crumb mixture.
In a separate bowl, whisk together the granulated sugar, cornstarch, and cold water. Microwave this mixture for 3-5 minutes until it thickens and becomes clear. Stir in the vanilla extract.
Pour the sugar sauce over the rhubarb in the baking dish.
Evenly distribute the remaining crumb mixture over the top of the rhubarb and sugar sauce.
Bake in the preheated oven for 30-40 minutes, or until the edges are bubbling and the topping is golden brown.
