  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 1 1/2 cups granulated sugar
  • 1 teaspoon cocoa powder
  • 1 pound cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, sift together the flour, granulated sugar, baking soda, salt, and cocoa powder.
  3. In a large bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until smooth and thoroughly combined.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake in the preheated oven for 18-20 minutes, checking with a toothpick for doneness.
  7. Let the cupcakes cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
  8. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
  9. Gradually add the powdered sugar, one cup at a time, beating well after each addition, and mix in the vanilla extract.
  10. Once the cupcakes are completely cooled, frost them with the cream cheese frosting.
