5 medium tomatoes (a mix of colors)
1 aubergine (eggplant)
2 red onions, sliced
4 garlic cloves, crushed
1 tbsp caster sugar
2 courgettes (1 green and 1 yellow)
20g grated Parmesan or vegetarian alternative
150g frozen butter
300g plain flour
4 tbsp polenta
50g extra mature cheddar, coarsely grated
Small bunch of thyme, leaves picked
1 egg yolk, beaten
Instructions
Prepare the Pastry: The night before, freeze the butter wrapped in foil until solid. In a large bowl, combine flour, half of the polenta, grated cheddar, picked thyme leaves, and a pinch of salt. Grate the frozen butter into the flour mixture using a coarse grater. Stir lightly with a knife until it resembles coarse crumbs. Gradually add cold water, mixing lightly until the dough forms a ball. Wrap in cling film and chill for at least 30 minutes.
Prepare the Vegetables: Preheat oven to 200°C (180°C fan, gas mark 6). Slice tomatoes and aubergine. Toss aubergine slices with 1 tbsp olive oil, salt, and pepper. Roast on a lined tray for 20 minutes until tender. In a pan, heat remaining olive oil. Cook red onions until softened, then add garlic and sugar. Cook until fragrant. Add courgettes, cook until tender, and season. Set aside.
Assemble and Bake: Roll out chilled pastry on a floured surface to 3mm thickness. Line a 23cm tart tin, trim excess. Sprinkle remaining polenta over pastry base. Layer aubergine, tomatoes, onion mixture, and Parmesan evenly. Brush pastry edges with beaten egg yolk. Bake for 40-45 minutes until golden and vegetables are caramelized.
Serve: Garnish with reserved thyme leaves. Serve warm or at room temperature, optionally with a side salad.
