1 pound ground lamb
1/4 cup fresh mint, chopped
1/4 cup fresh parsley, chopped
1/2 cup shelled pistachios, chopped
1 egg, lightly beaten
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper, to taste
1/4 cup breadcrumbs
1 cup Greek yogurt
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh lemon juice
1 cucumber, grated and drained
Burger buns or pita bread
Lettuce leaves
Sliced tomatoes
Sliced red onion
Instructions
In a bowl, mix Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Stir until well combined. Refrigerate until ready to use.
In a large bowl, combine ground lamb, chopped mint, chopped parsley, chopped pistachios, minced garlic, ground cumin, ground coriander, salt, pepper, beaten egg, and breadcrumbs. Mix until just combined.
Form the mixture into patties and place them on a plate. Refrigerate for at least 30 minutes to help the patties firm up.
Heat a grill or skillet over medium-high heat. Cook the patties for 5-6 minutes on each side, or until they reach your desired level of doneness.
Toast the burger buns or pita bread on the grill or in a toaster.
Spread a generous layer of tzatziki on the bottom half of each bun or pita. Top with a lamb patty, lettuce, sliced tomatoes, and sliced red onion. Cover with the top half of the bun or fold the pita.
