1 tablespoon oil
1 green bell pepper, diced
2 pounds ground beef
2 cloves garlic, chopped
1/2 teaspoon salt
8 ounces mushrooms, diced
4 ounces provolone cheese (optional)
1 cup panko breadcrumbs (gluten-free if needed)
1/2 teaspoon pepper
2 eggs
1 teaspoon Worcestershire sauce
2 tablespoons ketchup
8 slices provolone cheese
1/2 cup cheese whiz (optional)
Instructions
Heat oil in a large pan over medium heat. Add diced onion, bell pepper, and mushrooms. Cook until vegetables are tender, about 7-10 minutes. Stir in chopped garlic and cook for an additional minute. Remove from heat.
In a large bowl, combine ground beef, salt, pepper, cheese whiz (if using), Worcestershire sauce, ketchup, eggs, and panko breadcrumbs. Add the cooked vegetable mixture and mix until just combined.
On a baking sheet, shape half of the meat mixture into a loaf. Place the solid piece of provolone cheese in the center. Top with the remaining meat mixture and seal the edges well. Shape the loaf as desired.
Bake in a preheated oven at 350°F (180°C) for 50-60 minutes, or until cooked through.
Spread the sliced provolone cheese over the top of the meatloaf. Return to the oven and broil for 2-4 minutes, or until the cheese is melted and bubbly.
