  • 2 (15 ounce) cans Libby's Sliced Peaches
  • 1 cup half & half
  • 1 cup milk
  • 6 eggs
  • ¾ cup packed brown sugar
  • ½ cup butter
  • 2 Tbsp. corn syrup
  • 1 tsp. cinnamon
  • ½ tsp. vanilla extract
  • ¾ cup packed brown sugar (for streusel)
  • 6 Tbsp. butter, softened (for streusel)
  • ⅔ cup flour (for streusel)
  • ½ tsp. cinnamon (for streusel)

Instructions

  1. In a small saucepan, combine ¾ cup brown sugar, ½ cup butter, and 2 Tbsp. corn syrup. Heat over medium until blended, stirring frequently. Pour this mixture into a greased 9×13 inch pan.
  2. Arrange the sliced French bread in a single layer over the brown sugar mixture in the pan.
  3. Drain the canned peaches and spread them evenly over the bread slices.
  4. In a medium bowl, whisk together 1 cup milk, 1 cup half & half, 6 eggs, 1 tsp. cinnamon, and ½ tsp. vanilla extract until well combined. Pour this custard mixture over the peaches and bread.
  5. Cover the pan and refrigerate for several hours or overnight to let the flavors meld.
  6. When ready to bake, preheat the oven to 350°F. Prepare the streusel topping by combining ¾ cup brown sugar, 6 Tbsp. softened butter, ⅔ cup flour, and ½ tsp. cinnamon in a bowl. Mix until it forms a crumbly texture.
  7. Sprinkle the streusel evenly over the French toast.
  8. Bake, uncovered, for 1 hour, until the top is golden and the custard is set.
