Ingredients

Scale
  • 10 tablespoons unsalted butter, chilled
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ cup whole milk
  • 2 cups baking mix
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 teaspoon salt
  • 4 cups fresh blueberries
  • 8 cups sliced fresh ripe peaches, peeled, pitted, and sliced
  • 2 tablespoons flour or baking mix
  • ¼ cup granulated sugar

Instructions

  1. Preheat your oven to 375°F. Grease a 9×13-inch glass baking dish with cooking spray. In a large mixing bowl, combine the sliced peaches, blueberries, granulated sugar, and flour. Mix well. Spread the fruit mixture evenly in the prepared baking dish. Bake in the preheated oven for 10 minutes.
  2. While the fruit is baking, prepare the topping. In a medium bowl, combine the baking mix, brown sugar, baking powder, cinnamon, and salt. Cut in the chilled butter using a fork or pastry blender until the mixture is crumbly. Stir in the milk and vanilla extract until just combined.
  3. Remove the partially baked fruit from the oven. Drop spoonfuls of the cobbler topping over the hot fruit mixture. Return the dish to the oven and bake for an additional 45 minutes, or until the topping is golden brown and the fruit is bubbly. Let the cobbler sit for 5-10 minutes before serving to allow the flavors to meld.
