Ingredients

Scale
  • 2 tablespoons vegetable oil
  • 8 oz wide rice noodles
  • 1/4 teaspoon white pepper
  • 2 cloves garlic, minced
  • 1/2 cup sliced carrots
  • 2 large eggs, lightly beaten
  • 1 cup broccoli florets
  • 1 tablespoon dark soy sauce
  • 1/2 pound chicken breast or beef, thinly sliced
  • 1 cup sliced bell peppers
  • 3 tablespoons soy sauce
  • 1 tablespoon sugar
  • 2 tablespoons oyster sauce
  • 1/4 cup chopped fresh basil (optional)
  • Lime wedges, for serving

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Add thinly sliced chicken or beef to the pan and cook until browned and cooked through, about 4-5 minutes.
  4. Toss in broccoli florets, sliced bell peppers, and carrots. Stir-fry for about 2-3 minutes until the vegetables are tender-crisp.
  5. Push the ingredients to one side of the pan. Pour the lightly beaten eggs into the empty side and scramble until cooked through. Mix the scrambled eggs with the other ingredients.
  6. Add the cooked rice noodles to the pan. Pour in soy sauce, dark soy sauce, oyster sauce, sugar, and white pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
  7. Stir in fresh basil if using.
  8. Serve hot with lime wedges on the side.
