These oatmeal raisin cookies are a delightful combination of chewy oats and sweet raisins, perfectly spiced with cinnamon and nutmeg. They are soft, buttery, and make a great treat for any occasion.

  • 3 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ teaspoon nutmeg
  • ¾ teaspoon cinnamon
  • 1 ½ cups butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 ½ cups raisins

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar with an electric mixer on high until light and fluffy, about 3-4 minutes. Mix in the eggs and vanilla extract.
  4. Gradually add the flour mixture to the butter mixture while mixing on low speed. Once combined, fold in the oats and raisins.
  5. Use a cookie scoop to form 1 ½-inch balls of dough and place them 2 inches apart on the prepared baking sheets.
  6. Bake for 12-14 minutes, or until the cookies are slightly golden around the edges. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
