1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon

3 cups old-fashioned rolled oats
Instructions
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Mix in eggs one at a time, then add vanilla extract.
In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
Stir in the rolled oats until evenly distributed.
Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden and the centers are slightly soft. Cookies will firm up as they cool.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
