  • 1/3 cup parsley leaves, roughly chopped
  • 4 oz goat cheese
  • 2 tablespoons olive oil
  • 8 oz mushrooms, any kind, sliced
  • 1 egg, whisked for egg wash
  • 1/4 cup parmesan, grated
  • 1/4 teaspoon each of sage, thyme, rosemary, salt, pepper
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup white wine (can substitute with chicken broth)
  • 10 4-inch puff pastry sheet squares

Instructions

  1. Preheat your oven to 400°F (200°C) and line two large baking pans with parchment paper.
  2. Lay out the puff pastry squares on the pans, ensuring they are spaced about an inch apart. Prick the surface of each square with a fork to prevent them from puffing too much.
  3. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the finely chopped shallot and minced garlic, sautéing for 1-2 minutes until fragrant.
  4. Add the sliced mushrooms to the skillet along with the remaining tablespoon of olive oil and the sage, thyme, rosemary, salt, and pepper. Cook for another 2 minutes.
  5. Pour in the white wine (or chicken broth) and cook for 4-5 minutes until most of the liquid has evaporated and the mushrooms are tender.
  6. Remove the skillet from the heat and stir in the goat cheese, grated parmesan, and chopped parsley until everything is well combined and the cheese is melted.
  7. Spoon the mushroom and cheese mixture evenly onto each puff pastry square. If desired, pinch the edges of the pastry to create a decorative border.
  8. Brush the edges of the pastry squares with the whisked egg wash.
  9. Bake in the preheated oven for 25-30 minutes, or until the tarts are golden brown and puffed up.
  10. Allow to cool slightly before serving.
