2 tbsp white miso paste
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sesame oil
1 garlic clove, finely grated
2 x 250g sirloin steaks
200g thin rice noodles
1 red pepper, thinly sliced
1 carrot, julienned
4 radishes, thinly sliced
3 spring onions, thinly sliced
Small bunch of coriander, chopped
2 tbsp sesame seeds, toasted
Instructions
In a small bowl, combine white miso paste, soy sauce, mirin, sesame oil, and grated garlic. Mix well to create the marinade.
Place sirloin steaks in a shallow dish and pour half of the marinade over them. Coat steaks evenly. Marinate for at least 30 minutes, or up to 2 hours for deeper flavor.
Cook rice noodles according to package instructions. Drain and rinse under cold water to cool. Set aside. In a large bowl, combine cooled noodles with red pepper, julienned carrot, sliced radishes, spring onions, and chopped coriander.
Heat a griddle pan or frying pan over high heat. Cook steaks for 2-3 minutes on each side for medium-rare, or to your preferred doneness. Remove steaks from pan and let rest for a few minutes.
Toss noodle salad with remaining marinade. Slice rested steaks thinly and arrange on top of the salad. Sprinkle toasted sesame seeds over the dish. Serve immediately.
