2 cups water
2 cups uncooked short grain rice
1 tbsp miso
2 tsp sugar
2 tsp sake
2 tsp mirin
1 and 1/2 tbsp butter
1 tsp sesame seeds (for garnish)
1 tsp finely chopped chives (for garnish)
1 tbsp soy sauce
1 and 1/2 tbsp Everything Bagel seasoning
1 and 1/2 tbsp vegetable oil
Instructions
Cook the rice in a rice cooker according to its instructions. Once cooked, let it cool slightly.
In a bowl, combine miso, mirin, sake, and sugar. Mix well to make the miso mixture. Divide the cooked rice into 6 equal portions and shape each into a triangle using cling wrap.
Heat a cast iron skillet over medium heat and add butter. Grill the rice balls for about 1 minute per side until lightly crispy. Brush the grilled rice balls with the miso mixture and continue grilling until crispy on the outside.
Heat a skillet with vegetable oil. Grill the rice balls similarly, brushing each side with soy sauce. Sprinkle Everything Bagel seasoning on the grilled rice balls while cooking until crispy.
Garnish the rice balls with sesame seeds, finely chopped chives, or additional Everything Bagel seasoning.
