125g salted butter
125g light brown soft sugar
100g caster sugar
1 large egg
225g plain flour
½ tsp baking powder
2 drops peppermint extract
100g dark chocolate chips
100g dark chocolate, roughly chopped
3 peppermint candy canes, finely chopped or crushed
Instructions
Melt the butter in a pan and allow it to cool slightly. Pour into a large bowl and whisk in both sugars and the egg until well combined. Mix in the flour and baking powder until a dough forms. Beat in the peppermint extract, then fold in the dark chocolate chips and chopped chocolate. Wrap the dough tightly and chill in the refrigerator for 1 hour.
Preheat the oven to 180°C (160°C fan) or gas mark 4. Line a baking tray with parchment paper. Scoop tablespoon-sized portions of dough onto the prepared baking tray, leaving enough space between each cookie. Flatten each slightly with the back of a spoon.
Bake for 10-12 minutes until the edges are just turning golden. Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
Once cooled, sprinkle the chopped or crushed peppermint candy canes over the cookies for decoration and added minty crunch.
