  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green chiles
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • Chopped cilantro for garnish
  • Sliced jalapeños for garnish
  • Diced tomatoes for garnish

Instructions

  1. Rub chicken breasts with chili powder, cumin, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for 7-8 minutes per side, or until browned and fully cooked. Set aside on a plate.
  2. In the same skillet, melt butter over medium heat. Add flour and whisk until smooth. Gradually pour in the milk, whisking continuously until the mixture thickens. Lower the heat and stir in shredded cheddar cheese and chopped green chiles. Continue to stir until the cheese is melted and the sauce is creamy. Season with salt and pepper.
  3. Place the cooked chicken breasts on a serving dish. Pour the warm cheese sauce over the chicken. Garnish with chopped cilantro, sliced jalapeños, and diced tomatoes.
