4 skinless, boneless chicken breast halves
Salt and pepper, to taste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 tablespoons olive oil
1/2 cup sun-dried tomatoes, chopped
1/2 cup Kalamata olives, pitted and sliced
1/4 cup capers, drained
1/4 cup white wine or chicken broth
1/4 cup chicken broth
1 tablespoon lemon juice
Fresh parsley, chopped, for garnish (optional)
Instructions
Season chicken breast halves with salt, pepper, dried oregano, dried basil, dried rosemary, garlic powder, and onion powder, rubbing the seasonings evenly on both sides.
In a large skillet, heat olive oil over medium-high heat. Add seasoned chicken breasts and cook for 5-6 minutes per side, until browned and cooked through. Remove chicken from skillet and set aside.
In the same skillet, add chopped sun-dried tomatoes, sliced Kalamata olives, and drained capers. Cook for 1-2 minutes, stirring frequently.
Deglaze the skillet with white wine (or chicken broth), scraping up any browned bits. Allow wine to reduce slightly.
Stir in chicken broth and lemon juice. Return cooked chicken breasts to the skillet, spooning sauce and Mediterranean mixture over the top.
Simmer for 2-3 minutes to heat through and meld flavors.
Remove from heat. Garnish with chopped fresh parsley if desired.
Serve hot, with Mediterranean mixture and sauce spooned over the chicken breasts.
