  • 2 large egg whites
  • ½ cup white sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Double Boiler: Fill a small pot with water and bring it to a simmer over medium heat.
  2. Mix Egg Whites and Sugar: In a glass or metal mixing bowl, combine egg whites and sugar. Place the bowl over the pot of simmering water, creating a double boiler.
  3. Dissolve Sugar: Whisk constantly until sugar fully dissolves and temperature reaches 160°F, about 5 minutes.
  4. Whip Egg White Mixture: Transfer mixture to a stand mixer fitted with a whisk attachment. Beat on medium speed until stiff peaks form, approximately 5 minutes.
  5. Add Marshmallow Fluff and Vanilla: Gradually add marshmallow fluff to the mixture, 1-2 teaspoons at a time, over 1-2 minutes. Pour in vanilla extract. Continue beating on high speed until stiff peaks form again, about 3 minutes.
  6. For Cupcakes: Spoon frosting into a piping bag fitted with desired tip and pipe onto cupcakes.
  7. For Cakes: Use a spatula to spread frosting evenly over sides and top of the cake.
  8. Garnish: Decorate frosted desserts with mini marshmallows or chocolate sprinkles for extra flair.
