This Maple & Chilli Glazed Leg of Lamb is a delightful combination of sweet maple syrup and spicy chillies, creating a flavorful crust that enhances the tender lamb. Perfect for special occasions, this dish is sure to impress your guests with its rich taste and beautiful presentation.

Ingredients

  • 2kg leg of lamb
  • 100ml maple syrup
  • 2 tbsp soy sauce
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, finely chopped
  • 12 red chillies, finely chopped
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 200°C (180°C fan)/400°F/gas mark 6.
  2. In a small bowl, mix the minced garlic, chopped rosemary, olive oil, salt, and pepper. Rub this mixture all over the leg of lamb.
  3. Place the seasoned lamb in a roasting tin. Roast in the preheated oven for 20 minutes.
  4. In a saucepan, combine maple syrup, soy sauce, chopped chillies, and Dijon mustard. Heat gently until smooth and slightly thickened.
  5. After 20 minutes, reduce the oven temperature to 180°C (160°C fan)/350°F/gas mark 4. Brush the lamb with the glaze and continue to roast, basting every 15 minutes for about 1 hour and 30 minutes.
  6. Remove the lamb from the oven and cover loosely with foil. Let it rest for 20 minutes before carving.
