2 cups leftover mashed potatoes
2/3 cup shredded cheddar cheese
3 strips bacon, cooked and finely diced
1/3 cup chopped scallions
2 tablespoons flour
1 egg
1 ¼ – 1 ½ cups Italian bread crumbs
Oil for frying
Salt and pepper
Ranch or Honey Mustard for dipping
Instructions
In a large mixing bowl, combine mashed potatoes and flour until well combined. Stir in shredded cheddar cheese, diced bacon, and chopped scallions.
Take about a heaping tablespoon of the potato mixture and roll it into a small ball using your hands. If the mixture doesn’t hold its shape, add a bit more flour until it does. Repeat until all mixture is used.
Heat oil in a medium saucepan or fryer to 350-375 degrees Fahrenheit (175-190 degrees Celsius).
In separate bowls, whisk the egg with salt and pepper, and place bread crumbs in another bowl. Dip each potato ball into the egg mixture, then roll in bread crumbs until fully coated. Place coated balls on a sheet pan.
Test the oil temperature by frying one potato ball—it should bubble immediately and take 1-2 minutes to brown and cook through. Adjust oil temperature if needed.
Fry the potato balls in small batches for 1-2 minutes, until golden brown. Remove with a slotted spoon and drain on paper towels.
Allow to cool slightly, then serve warm with ranch or honey mustard dipping sauce.
