This loaded cauliflower casserole is a creamy, cheesy dish that combines tender cauliflower with rich cheeses, crispy bacon, and fresh green onions. It’s a comforting and satisfying low-carb alternative to traditional casseroles, perfect for cozy dinners.

  • 2 pounds cauliflower florets
  • 6 ounces Monterey Jack cheese, shredded, divided
  • 6 ounces sharp cheddar cheese, shredded, divided
  • 8 ounces cream cheese, softened
  • ¼ cup heavy cream
  • 1 ½ cups green onions, sliced (about 2 bunches)
  • 6 slices bacon, cooked and crumbled
  • 1 clove garlic, grated
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, steam cauliflower florets with about 1 inch of water until tender, approximately 5 minutes.
  3. In a large bowl, mix together ¾ of the shredded sharp cheddar cheese, ¾ of the shredded Monterey Jack cheese, softened cream cheese, and heavy cream until smooth.
  4. Stir in sliced green onions, crumbled bacon, and grated garlic into the cheese mixture.
  5. Drain the steamed cauliflower and add it to the cheese mixture. Stir until the cauliflower is fully coated and combined with the cheese.
  6. Taste the mixture and add salt and pepper as needed.
  7. Pour the cauliflower mixture into a 2-quart casserole dish. Sprinkle the remaining cheddar and Monterey Jack cheeses on top.
  8. Cover the dish with foil and bake for 25 minutes. Remove the foil and continue baking until the cheese is golden and bubbly, about 10 more minutes.
  9. Remove from the oven and serve warm.
