2 – 14.5 oz cans chicken broth
4 medium potatoes, peeled and cubed
2–3 large carrots, peeled and diced
1 tsp onion powder
2 small heads broccoli, washed and diced
3 tbsp butter
1/3 cup flour
3½ – 4 cups milk
4 cups shredded cheddar cheese
1 tsp salt
½ tsp garlic pepper
6 slices bacon, cooked and chopped
Instructions
In a large pot, combine chicken broth, diced carrots, cubed potatoes, and onion powder. Bring to a boil, then cover and simmer for 10 minutes.
Add the diced broccoli to the pot. Cover and simmer for an additional 10 minutes.
In a separate saucepan, melt butter and whisk in flour. Cook for 1 minute until golden brown.
Gradually whisk in milk and cook for 5 minutes until the sauce thickens. Stir in cheddar cheese until melted. Season with salt and garlic pepper.
Pour the cheese sauce into the pot with the vegetables. Stir until well combined, adjusting consistency with additional milk if needed.
Ladle the soup into bowls and top with chopped bacon. Serve warm.
