These Lemon Meringue Scones are a delightful combination of fluffy scones filled with tangy lemon curd and topped with a light, sweet meringue. Perfect for brunch or as a sweet treat, they offer a refreshing citrus flavor that is sure to please any palate.

  • 3 cups self-raising flour
  • 1/4 cup caster sugar
  • 80g cold butter, cubed
  • 1 cup milk
  • 1 egg, lightly beaten
  • 1/2 cup lemon curd
  • 2 egg whites
  • 1/2 cup caster sugar, extra

Instructions

  1. Preheat oven to 220°C. Line a baking tray with baking paper.
  2. Sift flour into a large bowl. Add sugar and stir to combine. Rub in butter until the mixture resembles breadcrumbs. Make a well in the center, add milk and egg, and stir until a soft dough forms. Turn onto a floured surface and knead gently until smooth. Press out to a 2cm thick round and cut rounds using a 5cm cutter. Place on the prepared tray.
  3. Bake for 12-15 minutes or until golden and hollow when tapped. Cool on a wire rack.
  4. Cut scones in half and spread each with lemon curd.
  5. Beat egg whites until soft peaks form. Gradually add extra sugar, beating until dissolved.
  6. Spoon meringue onto each scone and place under a hot grill for 1-2 minutes or until golden.
